Cafe 15-Fifteen opened in July 2016 to serve as the central serving and dining space for this approximately 140-bed hospital. RDG immediately saw the need for a refreshed and unique design.
The highlight of the servery is a display cooking station for made-to-order meal choices. Customers have a variety of menu items available as well as a selection of grab-and-go items. Coinciding with the transformation taking place in the servery, the kitchen was completely renovated to support a burgeoning room service model and an evolving catering program. Storage, flow, and food production elements were all completely rethought and reworked. To ensure no loss of meal service, a mobile kitchen was put into action for a three-month transition period.
Cafe 15-Fifteen boasts fresh, vibrant food options for patrons and employees in a bright environment that refreshes and rejuvenates with the natural textures and colors in the design. No loss of meal service occurred as the mobile kitchen was put into action for the three-month renovation process, ensuring all team members were well-fed and ready to serve.
